Vegan arrabbiata pasta

This Italian pasta recipe makes an excellent vegan dish and only takes 20 minutes to make! The fresh flavour mixed with parsley and parmesan is a must for this dish plus adding a touch of cayenne powder to give it a spicy kick. You can enjoy this dish with a fresh salad and warm fresh crusty bread. Delicious and healthy!

Ingredients:

  • 200g Orwell health
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 1/2 tsp cayenne powder
  • 12 rehydrated dried tomatoes
  • 1 tbsp dried oregano
  • 800g canned chopped tomatoes
  • 2 tbsp tomato paste
  • 1/4 tsp sea salt
  • Vegan parmesan cheese and chopped parsley for garnish

Method:

Heat the oil in a pan and add the cayenne powder, garlic, dried tomatoes and oregano. Cook until the garlic starts to brown.

Add the chopped tomatoes, tomato paste and sea salt, then cook for a further 5 - 10 minutes until the sauce starts to thicken.

Add the cooked pasta and then serve with vegan parson cheese and chopped parsley!
