Lemon, Broccoli & Chilli Soybean Pasta

We stumbled across this healthy vegetarian pasta on Olive and we had to share it with you all! Try this recipe with our Organic Soybean Pasta for added protein and fibre to this flavoursome dish. This recipe is super-easy to make and only takes 20 mins to make, perfect for those mid-week dinners.

Ingredients

  • Orwell Health Organic Soybean spaghetti 150g
  • Long stem broccoli 300g, roughly chopped
  • Oil
  • Shallot 1, sliced
  • Chilli flakes a large pinch plus more to serve
  • Garlic 1 clove, crushed
  • Lemon 1, zested and half juiced

Method

Cook the spaghetti in boiling water and add the broccoli to the pan for the last 3 minutes, then drain.

While the Spaghetti is cooking, heat 1 tsp oil in a large frying pan, and gently fry the shallot, chilli flakes and garlic.

Add the pasta and broccoli to the pan, and mix in the lemon zest, the juice and season well. Then you’re ready to serve. Enjoy!
