10-minute Green Soybean Linguine

Pressed for time? Our Green Soybean Linguine takes just 10 minutes and is delicious, nutritious and filling.

To create this dish, you just need to whip up a quick pesto and add it to our soybean linguine.

INGREDIENTS:

Serves 4

  • 200g Orwell soybean linguine
  • 140g fresh basil leaves
  • 90g pine nuts
  • 2 cloves of garlic
  • 3 tablespoons extra virgin olive oil
  • 3-4 tablespoons water
  • 1/2 lemon
  • sea salt and ground black pepper to taste

METHOD:

To begin, place your Orwell linguine in a large pot, cover with water and bring to boil per the instructions on the packaging.

For the pesto, put the basil, nuts, garlic, lemon and salt and pepper into a food processor or small blender and whizz until a paste has formed. Slowly add the olive oil along with the water until you reach the desired consistency.

To finish, once cooked, drain the pasta and toss with the pesto sauce. Sprinkle a pinch of salt and pepper to taste and you’re done.
